Last night I was home and it occurred to me that I haven’t baked in a very long time. So I figured I would put my apron on and surprise my husband. I was debating between brownies and blueberry banana bread. Of course I could not decide so I went with both! 🙂
As much as these may look unhealthy they are 100% healthy and guilt free. YAY!! After filling my house with the amazing smell of baked blueberry banana bread and brownies and having them approved by my mom and husband, I knew I had to share. I hope you enjoy these yummy treats!!
All the ingredients I used were organic. Remember always have fun especially when baking yummy goodness and feel free to make any substitutions you would like!!
Banana Bread Ingredients:
- 1 cup almond meal
- 1/4 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tbs coconut oil
- 3 eggs (organic free range)
- 2 tbs spiced rum (regular rum with a dash of cinnamon and nutmeg)
- 2 very ripe bananas, mashed
- 1/4 cup maple syrup (or raw honey)
- 1 cup fresh blueberries
Optional Topping:
- 1 tbs coconut sugar
- 2 tsp cinnamon
Instructions
- Preheat your oven to 350 degrees
- In a large bowl combine all of your dry ingredients.
- In a separate smaller bowl, mix together all of your wet ingredients.
- Slowly add your wet ingredients to your dry ingredients and mix with a hand mixer.
- Fold in your blueberries with a silicone spatula. Be careful not to over mix and break your blueberries
- Spray your pan with coconut oil
- Pour your batter into the loaf pan and distribute evenly.
- Sprinkle your combined coconut sugar and cinnamon topping over the top of your bread. (This step is optional)
- Bake for 40 minutes, or until golden brown and a knife or toothpick comes out cleanly when inserted into the center of your loaf.
- Let loaf cool for about 10 to 15 minutes unless you are like me and cannot wait to try a piece!
- Once your loaf has cooled down or once you are ready to eat it, slice it and share!
Brownies Ingredients:
- 2 eggs
- 1/2 tsp vanilla
- 3 tbs coconut oil
- 3 tbs apple sauce
- 1/2 cup of 100% maple syrup or raw honey
- 1/2 cup almond flour
- 1/2 cup unsweetened cocoa
- 1/4 cup nuts of your choice (I skipped this part)
- 1/4 cup semi sweet chocolate chips or white chocolate chips
Instructions:
- Preheat your oven to 350 degrees
- In a bowl mix all of your wet ingredients
- Add the dry ingredients
- Slowly add your wet ingredients to your dry ingredients and mix with a hand mixer.
- Fold in your chocolate chips and nuts
- Spray your pan with coconut oil
- Pour your batter into the loaf pan and distribute evenly.
- Bake for 30 minutes, or a knife or toothpick comes out cleanly when inserted into the center of your brownies.
- Let cool for about 10 to 15 minutes unless you are like me and cannot wait to try a piece!
- Once your brownies have cooled down or once you are ready to eat it, slice it and share!
By far the most delicious treat I’ve had in a while. The fact that they are completely guilt free/healthy is an added plus. Keep up the good work!
